I'm sure I'm not alone here in having a bank of parked domains for projects that I hope to one day get around to, but that day never seems to come...
Anyway, is there a good place to point these domains (or a good thing to do with them that requires the minimum of effort) in order to generate a little hassle-free income...?

I have quite a few domains too that I wondered what to do with but I don't want to sell them. Looking at both SEDO & Namedrive I get the impression that they are advertising the domains for sale - is that right? Or can you just park them & share some of the revenue with them?
You can just park them and leave them, earning money for every click. Sedo, Namedrive or whoever you choose will pay you for every click. You can customise the pages with most parking services. An example of a customised Sedo landing page is this one.
Interesting to note that there was a discussion at a recent domain name conference where an expert claimed there was no empirical evidence that a developed site made more money than a PPC landing page.
Depends if the domain names have type in potential or have inbound links if not you may want to host them and put a jot of content there and links to your other current site(s) - maybe some rss feeds and leave them to fester, get spidered by SEs and provide you with some back links.

If you have 200+ domains and significant traffic, it's worth considering Sedo Pro. It offers better payouts and more powerful traffic management tools than the standard program does. Due to work commitments, I couldn't go. But I heard about it here. I think it's the one entitled "Victor Pitts chats with Steve Scott and Monte Live From SES San Jose" which refers to it.
Probably not the politically correct thing to say on a site dedicated to affiliate marketing, but PPC landing pages are probably only contributing slightly less to the well-being of the internet than most datafeed-driven affiliate pages and shopping portals which plague search engine results and generally have zilch original content.
I agree overall that domains ought to be developed - into quality sites - wherever possible.
