If I wanted the keyword 'red socks' then the main anchor text would therefore be 'red socks'. If I'm trying to rank higher for 'red socks' then what other anchor text variables could I use as I have been informed you need to vary your link text (although i've not done this on one of my sites and currently rank 2)

It certainly is good practice to vary the anchor text you use on links to it doesn't become too apparent to the search engines that you are optimising for one specific term.

Essentially you can use any phrase that has the term "red socks" in it, a good idea would be too use Google Keyword Tool to get some ideas:
