I always thought there was a time limit to when bounce rate would apply.
My reviews are extensive (200-300 words) so would take people atleast a few minutes to read, and then I would think that bounce rate wouldnt apply.

There couldn't be a time limit for a bounce. Time on page is calculated by taking the time when the analytics code was loaded, to when it is loaded again on another page. If the visitor bounces, the tracking code is only loaded once, so the analytics package doesnt know how long the visitor stayed for.
If your traffic is converting/doing what you want it to do, bounce rate is irrelevant.

If you have outbound links on your site (and you're using Google Analytics), you can stick this on them: <a href="http://www.website.com" onClick="javascript: pageTracker._trackPageview('/outgoing/productname');">

I agree with johnlfitz, I had an site a while ago that only provided reviews and my bounce rate was much higher than other sites. In the end I just modified the look/structure of the site so there were more things that engaged the user to get them to click and the bounce rate came down.

I ended up getting rid of the site eventually though.
