Someone has the domain I want say it is (erm thinking...) sydneyharbour.co.uk but I go to Googles Keyword Tool and it says that "Sydney Harbour" has 100K monthly searches but "Sydney Harbours" (with the s on the end!) also has 100K... now sydneyharbours.co.uk is available do you think I should get that given that the original is never going to be given up and I know I can build a better site and content than the competition has on what I originally wanted.
Appreciate any advice from people who may have had a simialr issue in the past or understand my predicament.

Depends on how much effort your going to put in.
sydneyharbour.co.uk doesnt show on the first page of Google when you search "sydney harbour" so first off having that domain wont push you straight to the top.
What I will say is over 3.5 million results come up for "sydney harbour".
You have to take domain age into account as its part of Googles algo, luckily enough that domain was only registered last year.
I agree with the last poster it depends on what kind of work you're going to put in. Maybe get it for a year to start then if you follow through with big plans extend it.
