Hi Tom,
As you are hosting .de domain name it would definitely appear in all the search engines but as its hosted on a UK based server with UK IP address, so you would get better ranking in google.co.uk than google.com because the search engine would categorize your website as a UK website and as a result you would get better ranking in UK search engine. To improve the rankings further in google.co.uk you will have to gain more back links from UK websites.

from my experience if you have a .de domain it will be indexed on the google.de and thus results there will be populated from your site -with the .de domain-
very few of the pages are going to be indexed on google.co.uk and results will not appear high there.
i had a local domain populated with english content and less than 0.2% of the pages are show on google.co.uk and ironically all traffic is comming via the local google site version where its indexed in full (nearly 99% of the pages)

If the TLD isn’t location-specific (such as .com), then search engines may use the location of the site’s IP address. This generally works pretty well, but sites that are hosted in a location other than their primary country can run into problems. In addition, large companies may have subfolders or subdomains for each country-specific site, rather than separate domains, and it may be problematic for those companies to secure each country-specific domain.
Now there’s a way to help avoid this type of guesswork, at least with Google. If you want to let Google know the location of your site, simply log in to the Google Webmaster Tools component of Google Webmaster Central.
Access the Tools tab, then choose Set Geographic Target. From there, you can provide information about where the site is located, and Google will use this information as a signal in ranking.
