The Sirloin comes from the middle of the beef loin and can be recognised by its distinctive belt of fat on the outside. It is similar in flavour and tenderness to the Ribeye, but is significantly leaner. Black Angus Burgers

These burgers will not let you down. Made with chuck and ground coarse, there is absolutely nothing added to them whatsoever. Just don't overcook them!

All our beef comes from free-range Black Angus cattle that roam in the gentle pastures of the South-West of Ireland. The mild climate there ensures that the animals are outside almost all the year round, they have been expertly reared and exclusively grass-fed. In the winter, our cattle are fed cereal and grass-based supplements such as hay and silage.

Lamb

Lamb Burgers

Made with 100% lamb mince, nothing else is added. Logically they are best cooked on the BBQ, but will do just as well indoors cooked on a hot griddle or cast iron pan. Try them with some sweet chilli sauce or fiery tabasco.

French Trimmed Lamb Cutlets

These cutlets are carved from a rack of lamb as you can see from the photographs. They are supremely delicate and must not be overcooked. Brush them lightly with oil, season with sea salt and black pepper and sear quickly on a very hot griddle. It is a great idea to rest them on the upturned fat side and the residual heat of the griddle will ensure pink flesh and wonderfully crispy fat.

Pork

Organic Pork Chops

Pork chops are wonderful things - very tasty, juicy and hearty all at the same time. Chops are cut from the rib of the pork, and once again the bone adds a lot of depth of flavour to this cut, while the lean meat makes for a very healthy dish. Make sure not to overcook them, leaving them to rest after cooking so they result in a very juicy steak.

They are excellent on a cast iron pan or quickly fried with some sage and finished off with white wine and pepper. Never forget the salt!
