Canne au Marc
A very classic saucisson from the Lyon region in France, it is made with pure pork and seasoned with the local liqueur, Marc de Bourgogne. Its name comes from its long and thin shape resembling that of a cane (Canne in French); a characteristic which is important to salamis and saucissons as it has a direct impact on the texture and consistency. Thin saucissons will dry out quicker, but also provide some variety when serving several cured meats together.
