Shiitake

These specialty mushrooms are as mysteriously unique as they are delicious. While often thought of as a vegetable and prepared like one, mushrooms are actually a fungus, a special type of living organism that has no roots, leaves, flowers or seeds.

Muscat Noir Grapes

Black Muscat Hamburg, one of Europe's favorite table grapes, has a very sweet flavour with an earthy taste.

Chasselas Grapes

In France, this variety of grape is often identified as a table grape. Although it is responsible for wine production of the lightly regarded ‘Pouilly Sur Loire’ appellation.It is recognizable by its coppery growth in spring, its indented leaves, long tendrils and its attractive translucent bunches that are golden in the sun, with small round grapes.

Chasselas has the flavors of flowers mixed with honey. Delicate, golden and juicy, is a perfect choice with salads, cheese, charcuterie or melon. It can be added to a chive cream sauce just before serving. Also it is considered an ideal pairing for Raclette or Fondue.

Cavolo Nero

Italian cabbage with dark green leaves that have a strong flavour. It is great to make soups - such as the classic Tuscan soup, ribolitta. Cavolo nero is also delicious just fried in olive oil with garlic and chillies.

Violina Pumpkin

The Violina pumpkin has thick yellow skin with orange-coloured glares and the flesh is yellow. Really sweet, it is used to make the tortelli filling and gnocchi. It is also great used in cakes. The Violina Pumpkin is also delicious baked.

Red Currants

Classically, made into jelly and served with lamb or pâtes, this is a versatile fruit and will add dimension to many a dessert. In Ireland, historically, people went door to door in costume asking for buns made with red currants on Halloween in an effort to ward off the claws of death. A bit grim but, to be on the safe side, start baking

Williams Pears

First Discovered in 1765, the Williams Pear gained it's name from a nurseryman named Williams who introduced it to the rest of the UK.
Juicy, sweet, and very fragrant, the Williams Pear melts in the mouth.

Organic Pork Chops

Pork chops are wonderful things - very tasty, juicy and hearty all at the same time. Chops are cut from the rib of the pork, and once again the bone adds a lot of depth of flavour to this cut, while the lean meat makes for a very healthy dish. Make sure not to overcook them, leaving them to rest after cooking so they result in a very juicy steak.

They are excellent on a cast iron pan or quickly fried with some sage and finished off with white wine and pepper. Never forget the salt!

Beaufort D’Alpage

Beaufort is a hard, somewhat sharp cheese made from cow's milk and is similar to gruyère. The milk used, comes from the Tarentaise or Abondance cows that graze in the Alps. Beaufort cheese lacks holes yet is similar to gruyère, comté or Emmental. However, it is often considered to be superior in taste.
